If you use an Address Book template, you can use either
%QUOTESTYLE="NONE" to have just the '>' displayed or
%QUOTESTYLE="=BB" to get 'BB>' as result. (Note the second '=',
it is important.)

If you do not use an AB template for that person, you can choose
your quote prefix in the Account's properties -> reply template.
