If you want to more customization that you have with Messages|Save
As..., you can you use the Print function. Print to the Generic Text
Printer with print as a file. You can customize the template for printer
including what information you wish.
BTW, in case you don't know, you can select a group of messages in a
folder and save them together in one plain text file with Save As.
