Sounds like you need to invest in one of those specialist spam
filtering tools that have been mentioned on this list now and then,
like Spam Weasel or SpamCop.

You could also try the filter be exclusion technique. This one is
based on the fact that if you filter mail from everyone you expect
mail from then everything else should be spam. I personally do the
following in the order mentioned:

Create filters for all list mail.

Create filters for all newsletters etc.

Create filters for all friends, family etc.

Create a filters that filters messages from addresses in my address
book to various folders. Here, I have a couple groups that are self
propagating. They just sit there and I don't administer them unless
there's a problem.

One is for list members. I created a filters that check senders
who post to the list to see if they're in my list members
address book group. If they're not there then they're added.

The other is for addresses, not in my address book, to which I
reply. If I'm replying to the message, it couldn't be from a
      spammer.

The rest of messages are almost always spam. These I filter to a spam
folder and mark as read on arrival. I check the spam folder daily at
leisure for legitimate mail.

The achievement through all this, is that:

I'm hardly ever look at messages marked as unread that are spam. I
also never lose legitimate mail. IMO, if you lose legitimate mail
    because of spammers, they've won.

It's a setup and forget arrangement. I don't have to be adding new
subject and address strings to maintain good spam filtering.

PS// To be truthful, since I've obtained a primary MX Server for my
domain mail, my spam message influx has been reduced from 20 spam
messages a day to 1-2 per week.
