There was a recursive macro written by somebody either on here, or on TBTECH that can sort it out during replying, but there isn't anything I think you can do during viewing fo the mail unless they stop sending mail as HTML, and set a line break of the specified length. Try http://www.silverstones.com/thebat/Library.html for the recursive macro. I am having trouble connecting to it at the moment (Marck?) but that could just be me.
