Based on Thomas' explanation, that sounds like the expected behavior. The plain text and rich text editors are now merged. Be default, the signature is in rich text, which you could change, if you like, by creating a new editor profile as Thomas explains in his post. Keep in mind, I don't believe you are actually sending both HTML and plain text in a single message. I believe the message type that gets sent is based on your editor preferences, but what gets rendered in the text editor/viewer will be based on the profile you currently have selected.
