Joel, I basically just leave it and use the option to Wipe Out last year's student work so teachers can continue using the same setup for this year.
I do make a complete site backup first and then clear out all discussions, quiz attempts, student files submitted -- it is a menu choice that teachers can actually do themselves for their classes.
