Joel, In my case they cannot unless I restore a backup for them. Trufully that has not come up for me and if teachers want they have the right to make their own backup of a year when they close out for the summer. Mine do not, but they could if they ever wanted to open old files.
I equate it to paper/pencil tests, homework, gradebooks. The school has archives of old grades, but students and teachers need to request access (they never do) or keep a copy of their own for future review. Not sure that is what you were asking. Sounds like you are leaving all your old courses up and online then creating new each year.-- that is not something I have been doing.
