Hi Jim, 

Have you considered and iPad with Dragon Dictation?  The Dragon App is free for 
the iPad and iPod Touch.  Apple earphones have a microphone, so your student 
could use that in conjunction with the iPad or iPod Touch with dragon 
dictation.  

If you are interested, I can arrange for a demo iPod with the software
