My favorite combination thus far hands down is LaTeX stored in a git
repository.
When I am on one of my osx systems I use Texpad (
http://itunes.apple.com/us/app/texpad-latex-editor/id458866234?mt=12 )
which is absolutely great.
When I am on any other system I use git+vi/vim to clone and edit the LaTeX
files.

This has proven to be extremely effective, for example I was recently at an
Engineering offsite where I took notes live during the event and at the end
of the event with minimal editing I had a 63 page PDF of meeting minutes.

I have also experimented with using git + Markdown files however I love the
ability in LaTeX to include graphics, syntax highlighting, generate pdfs
for printing, etc...
