Are the laptops' wireless cards mini-PCI? It's easy enough, and fairly cheap, to simply replace the built-in cards with cards that operate in both 2.4 and 5.x bands. http://www.roc-noc.com/mikrotik/minipci/radio/R52H.html is one such card that I've used before (caveat: not on Linux, I'm not sure how well the ath5k drivers work), with good success. Once you have a card that can see the 5GHz band, you can then use the same laptop tools you'd use for 2.4GHz.
