>From our experience at least with images of business cards, Tesseract seems to do better when given a grayscale image, especially if you think you know better which weights to assign to the red, green and blue components when you build your grayscale. Having said that, there are exceptions to every rule - we try to dynamically determine whether color mode may work better and revert to that mode in that case (happens in less than 10% of images).
