That's a matter of collaboration between your specific
printer and the printer driver. On our UNIX system, 
I use 'lpr -Zduplex' for double sided printing rotated
along the long side of the paper and 'lpr -Zsduplex'
when I want it rotated along the short end (this is using
LPRng with the ifhp filters). On Windows, you usually have
nice graphical illustrations that you could click on to get
the desired result.
