As far as meeting up im i work till 4 or 5 on as and off sun..
   so sat evening  or sunday would be best.

Maybe...

Discuss with Matt, he likes to make things w/o dairy since Saj cannot eat them. 
I don't know if the pineapple upside down cake has any dairy in it.

Also, could these be made with gluten-free flour or won't they hold together?

How to make it

 *   Preheat oven to 350 then grease cookie sheets.
 *   Cream together butter, sugar and egg then stir in lime juice, milk and 
salt then mix well.
 *   Combine flour and baking powder then add to butter mixture and stir in 
coconut.
 *   Drop by teaspoonfuls onto baking sheets leaving space for spreading then 
bake 20 minutes.
