Was talking to Terry at the Grotto mtg where he was prodding me about the main course, ie. meat, dishes. As noted, we will have access to pork and beef in large quantities so recipes with those as a base are needed. I googled "Caribbean beef" and came up with these, can y'all let me know what you think? We will definitely be bbq-ing and perhaps grilling some too, but we need something like these for the less well defined cuts of meat.
