5. Adai dosai 

Adai dosai is available inrestaurants as well as made in the homes. Here batter 
is not ground more, bothblackgram and thoorgram batter also prepared and added 
with rice batter and redchilli is added while grinding. Other ingredients like 
ginger, curry leaves,etc. are added after preparation of batter. The final 
batter will have a light yellowcolour due to adding of red chilli. 

This actually is an emergencypreparation in homes. Some people fry both sides, 
some use non-stick ware andmake thin adai and fry one side. 

Hotels prepare as thick adai.Normally served with aviyal. In the display board 
they display as Adai- Aviyal.The batter is not fermented for adaithosai. Chutni 
too served along with inhotels. Sambar is least suited as side dish. 

6. Set dosai 

The set dosai is the ordinary thickdosai made in our homes, but will have a 
slight yellow colour. I am not surewhether it is by the addition of small 
quantity of turmeric powder. However itis available in hotels normally. Aviyal 
as well as Vada Kari are served alongwith. Vadakari is liked by most. 

Set dosai is not freely availableitem in Kerala Hotels, but in Tamilnadu medium 
hotels it is available normallyin the afternoon. 

Once I was in a restaurant inChennai I had to wait for Vadai Kari being 
prepared to serve in an afternoon. Icould understand from the server the 
ingredients are also getting prepared. Iwas special to have set dosai vadakari- 
I like the taste of the dish vadakari. 

Vadakari is served limited and assuch chutni is also served with set dosai in 
addition. So far additional chutniand sambar is not charged by hotels!! 

7. Puliya dosai (Not fermented dove dosai) 

Unless dove is not fermented thequantity too will be less. On fermenting the 
quantity too increase along withquantity. Puliya dosai is prepared as such with 
reluctance in the house. Withnon-stick ware Puliya dosai prepared taste good. 
Sometimes slight curd is addedto give the fermented taste. Puliyadosai is an 
excellent snack in the evening. 

8. Mysore dosai 

Though called Mysore dosai, it isfreely available throughout Karnataka. I have 
consumed it in Bangalore. Though Mysorebonda is there in all hotels of Chennai, 
Mysore dosai is rare. Some udupihotels serve Mysore dosai. In Trivandrum also I 
have taken it from a smalludupi shop. 

Here a small quantity of red chillisammanthi is applied directly over our 
normal ghee roast while preparing. Thisitem is brownish.  It is not given 
asside dish. Side dishes are chutni and sambar. While chutni is similar to 
whatis available in Chennai, sambar from Karnataka has special taste. It has 
sweettaste. 

The dosai is either supplied asplain roast or as Masalai roast.  I amnot sure 
about the inner coating ingredients. Whether in Karnataka people makesuch dosai 
in houses is also not known to me. In Trivandrum I could get itserved with 
Vadakari also in a small udupi hotel. 

9. Mini dosai 

Mini dosai is a special item servedin star hotels. It is served with meals 
also. The size of the dosai is so smallthat it is less than the size of our 
palm. 

Update- With the tiffin set newly introduced in hotels one small dosai is 
includedas an item. 

10 Thattukadai dosai 

Thattukadai is wayside temporarystalls. Here dosai is the main item, other 
being chapathi and parota. Dosai isthicker, similar to home-made dosai and 
fried on both sides. Mainly forbachelors they serve best to have some food at 
late-night time. Normally theystart function after 8 PM. 

Being wayside they select a busybut better location to start the wheel 
restaurant. We cannot say the quality isvery good but good. Normally in Kerala 
they are run by people from Tamilnadu.In Tamlnadu too they appear in industrial 
and software areas. 

11. Kuzhi paniyaram 
I LIKE kuzhipaniyaram nothing butmade of dosai/iddali mavu added with cut 
chillies and ginger, fried in oilpouring it in Appakkarai and taken out in 
time. In Chennai it is available inGrand snacks, A2B and Saravanabhavan 
restaurants.
