MANGO IN SALTWATER (UPPU MANGA)

Mango season has started. In Chennai the dearest toBrahmins Maavaduhas started
appearing in market and sold in peak rates within hours.

Maavadu is tender mangoes with chuna (an acidicsecretion with pleasing smell).
Chuna in these mangoes  if takenraw would burn the mouth.

Depending onthe chuna, the increase in rates. The processing of maavadu is
different from salt mango.

In central Kerala we had only kannimanga put insalt solution and after a period
used as tender mango pickle (The brine would  be very tasty).

Like Vadumanga chilli paste, sesame oil, salt   andother ingredients are not
added for kanni manga pickle.

Some people remove full stem, some partially. Stem inbrine has good taste.
Something similar to thairmulagai (Chilli with lesshotness processed in curd
and dried) stem when fried.

Daily shaking, keeping in sun shine, till the mangoooze liquid is there in both
cases.

In most homes on those days in a similar manner largemangoes were processed in
salt brine. It was taken out during non-season,inside nut removed. Whether
season or not it is salt mango nivedyam in Trivandrum Sree
Padmanabhaswamytemple.

I am not sure any Perumal temple in Tamilnadu has suchNivedyam in addition
toSrirangam, Azakar kovil and Singaperumal kovil.

During season mango pulisseri and mango Koottan areprepared. PUlisseri using
ripen mango is dearer. For feasts especially amongNampoothiries mango pulisseri
is served. Mango as kashanam sambar has specialtaste.

In central Kerala we also used to process hard mangoesraw, cut to pieces, added
salt and sometimes green chili paste, dried in sun calledUnakka manga.
(Driedmango)

The very tasty avakka pickle from Andhra is special toits taste. In Chennai
also avakka pickle is prepared.  After coming to Chennai, I had the taste
ofavakka pickle.
