It's weird. I loved the Incredibles but the more I think about it the more I have issues with the idea of, "they already made a good FF movie they just called it the Incredibles." There are similarities (there's four of them, one of them stretches, one disappears, one is really strong) but other than that they are two different concepts. While the FF are super heroes they weren't in the sense that Mr. Incredible and Elasti-Girl were. The FF are high adventure and deal with weird and/or cosmic level threats. The Incredibles are straight up super heroes with costumes and secret identities.
I'm not suggesting that the Incredibles are bad or inferior. They're just different.
