Any T61p has more than enough horsepower for W7, and installing a SSD will be the biggest improvement in speed you're likely to see on that machine, especially if you're brave enough to go with the modded BIOS and unlock it to SATA 3.0 speeds...
XP doesn't support TRIM which is pretty much a must with any SSD... Good luck.
