Milk, or plain Yoghurt will kill the Chilli Pepper fire almost instantly! I forget exactly how, but it's a chemical reaction between some part of the dairy product, and the active part of the chilli spice, neutralising things rather well. It's also how the Indians make a creamy mild curry (Korma) that still has lots of flavor, but little fire (on the way in at least....)
Otherwise, if you are touring with a camper, or have a good cool box, keep a roll or two of a certain type of paper in there! Regards.
