In case of tutorial of "school management in 17 minutes":
Question :

You have menu to export module and select objects.
you can select all base objects and datetime while you start your work. and 
export all work as a module. By this way you can export new module with you 1 
week work too. No need to start/stop record.

It asks for module name version and description for tesp file.

That directory means Directory name for your addons module

You can import it directly from client or extract that zip and copy the 
containing directory with module name in your addons.

After entering all details when you click OK it will give you another wizard,
On next wizard you will find save as button. using that buttons you can save 
module in your local system, It will not create any directory anywhere you have 
to save it if you wish.

> which one I have to export if I want all my work from that tutorial as module

By default you will get all base object needed to export module.
Example: If you just want all partner data then remove all objects and select 
partners only and export.
