Let me just say that I have never had a blind student in my course. However, harkening back to teaching elementary school, I think you could manage by making copies of the overhead graphs. Then turn the overhead backwards and place the overhead on a semi-soft surface (like a mousepad). Take a ballpoint pen, press down, and trace the line of the graph. Voila! You have a raised surface that you can give to the student.
