Your understanding is, as far as I know this topic, incorrect. First, I don't think the Ancient Greeks has any knowledge of the Chinese at all. Second, the Greek are Europeans (though there was no understanding of Europe, as we think of it today. What we think if a "the" races today were unknown to the Greeks. When they spoke in roughly racial terms, it had more to do with what we would think of a nationalities -- the Lybians are this, the Egyptians are that, the Phoenicians are something else again, and those from north of Macedonia, they're just plain barbarians. :-)

There may be some talk somewhere of the *balance* of humors being different among the different race-nationalities, and accounting for some of the alleged behavioral differences among them (I don't have a reference off the top of my head), but that everyone (who was alive) had all four humors was aximoatic.
