I've used Perspectives on Personality by Carver and Scheier (4th ed.) for
three semesters of teaching Personality, and found it wonderfully
structured and well-suited to preparing a lecture. However, I received
feedback from my students that they found it rather dry and boring. A
friend of mine used Funder and Ozer's "The Personality Puzzle," which
doesn't seem as structured and is more light in reading, but the students
reportedly loved it. A nice combo might be to have the students use
Funder and Ozer's book, and use Carver and Scheier to structure and
supplement F & O for your lectures. One last comment - Hergenhahn and
Olsen's book is a wonderful reference for individual theorists (the
chapters are organized by theorist rather than theory), while the
aforementioned books are more organized by theoretical concepts. We don't
use Hergenhahn and Olsen for the Intro to Personality course here, since
an Advanced Personality course takes the approach of teaching by theorist,
but it's an excellent reference, at the least, and could be a good text if
you wished to organize your class more my prominent theorists than by
theory, per se.
