Since I am running a production site, and plan to have many many users,
I think that a combination of ACTION_OUTGOING="bare=append" to the user's
whitelist and -autocdb on all of my lists will work much better than
dated addresses.

I don't want to incur an increase in spam because my users are using
dated addresses. Besides, I personally think that from a "stupid user"
perspective, the "bare=append" method is much easier to comprehend than
a dated address.
