That's how I manage the files on my server now.
I've copied files across and edited some tags remotely, but it's a little slow. More so if music is playing. If you're initially loading a drive with gigabytes of music I'd definitely recommend doing so with the drive connected to a fast computer. Use the network sharing ability for adding a couple albums at a time. I don't even manage new rips on my server across the network, prefering to rip files and modify tags on my local desktop machine first, and then copy them over to the server when finished.
