At present there is no way to specify a music folder on the attached storage when using the Touch's built-in SBS. It scans the entire drive, but there is no reason that non-music files should prevent the scan from completing.
FYI, you can still choose a folder to be scanned in SBS 7.5.0 if you run it on a computer, just like "the old Squeeze Server".
