I haven't actually done it, so I don't know if it can even be done or
not. There are a number of tutorials on the net for doing ad hoc mode
under linux. I would read these and look at the existing networking
files on the Touch. You want to look in the rcS file on the Touch, this
is the main startup script which will do some network startup. There is
also a interfaces files somewhere under /etc (I don't remember exactly
where, I'm not at the Touch right now) I would look in those two files
and see where the iwconfig commands are issued and try and modify them
based on the ad hoc tutorials. 

Another option is to SSH into the controller and see how it is setup!
