Do you absolutely require the server to actually be unplugged when not
playing music? Is three watts low enough that you can leave it on all
the time? A sheevaplug will run at about 3 watts, if you put SBS on it
the server will be up and running just waiting for you to play music,
no need for anything to boot up etc. You plug an external drive into
the sheevaplug, you can either put music on it over the network or plug
the drive into a PC to copy music. 

For the controller part it sounds like an iPad may be just right for
you. There are at least two iPad apps now.
