You could invent a fictitious album name for them (eg, "50s Rock & Roll"), and use that as the Album tag for all of the tracks. You could then fill in any blank Artist tags with "Unknown" or whatever suits your fancy. You could leave the Track numbers blank, or just assign some arbitrary order -- but you probably want to avoid having the same track number for more than one track. Oh, and put a Compilation tag (set to 1) on all of them so that SBS will treat it as a big compilation album.
Even if the existing tags are a jumble, I would suggest saving them either on backup copies of the MP3s or in user-defined tags. You may decide later that you want to make sense of these tracks, and there is no point throwing away what is likely to be useful-but-disorganized information. When you say the Touch "won't have" what you have tried already, what exactly happens? Are you doing a full clear-and-rescan every time you change the tags? You should. Also, for cases where you delete tags, have you looked under the "No Album" or "No Artist" categories?
