This is my solution for a DIY NAS (which I actually use and have used
for years)

- get the cheapest CPU+RAM+MOBO combination you can find (a mainboard
with onboard video and at least 6 SATA ports is preferable)
- get a well ventilated big comuter case, one that will have slots for
10-12 HDDs/optical units, (there are adapters for installing 3.5" HDDs
in 5.25" bays that normally hold optical units they're just some metal
brackets.)
- if you plan on using more HDDs than your mainboard will provide for
get some PCI to SATA adapters (either normal PCI or PCI-E depending on
what free slots you have on your mainboard) 
- no mouse, keyboard or monitor necessary (except for the install
phase)
- assemble computer
- install a minimal CLI Debian system (it can be installed form an USB
stick  so no need for an optical unit); install SAMBA and sshd
- install Squeezebox - server
- put your DIY NAS in the basement or in some corner of the house where
nobody will be bothered by it and connect it to your home network (I
prefer a wired connection but wireless works too if you are patient :)
)
