Last time I looked, the initial setup of the Touch can be a little
tricky without an internet connection. IIRC, when you get to the point
in the setup where it asks you to create a mysqueezebox.com account, you
can press and hold the left arrow in the upper left corner of the screen
and it will take you out of the setup and to the main menu.

The other thing you're trying to do - operate a small network without a
router/switch, may also be tricky. In theory, you should be able to
connect the two devices directly. Configure the PC to use DHCP to get
its IP address and it will fail and fall back to using an automatically
generated link-local IP address of 169.254.x.x The touch is already
configured to use DHCP and should likewise assign itself a 16.254.x.x
address. With both devices connected and using the same network subnet
of IP addresses, they _should_ see each other.
