Dedicated anything is better than Touch a raspi or for hi performance an
intel nuc.
Run the OS you fancy , no need for monitor or kyeboard remote admn is
it. Keep it away in a closet out of sigth.

But keep everything on your normal network not just a cable from the
server to the Touch
