Logically thinking...

You have an issue, you've replaced the Touch and still have the issue,
so the Touch player itself is eliminated for now.

So now you need to look at anything else common to the two Touch
players

1. Server (your Mac) - So far you are investigating WOL, but you need to
consider anything that may have changed on your Mac
2. Network - Wireless, you could try to eliminate Wireless by
temporarily hard wiring the Touch, has anything else changed on your
wireless network? New router, wireless access points etc  
3. Power - From my understanding you have two Touch players and one
power supply unit, so if that PSU is starting to fail your problem will
persist with both players, SqueezeBox Player PSU's have been know to
fail and cause issues with the wireless reliability and certainly in the
case of the Touch the remote control receiver, so if you have
connectivity issues with wireless and/or problems with using the Touch
remote then the PSU could be at fault.
