That is correct.  I could, pretty easily, my From a templatable field.
The Reply-To field, on the other hand, should be set as the email2trac
handler if email2trac is installed.  If templatable From fields is
something that a lot of people want, please create a ticket[0], or if
one exists, add yourself in the CC field so I can keep track of how many
people want this feature.
