Heiko,

     The only dimensions for symbols that I have found are :
a) BS5378 : 1980 part 2 amendment 4188 : 1983 and these are preferred
sizes for safety signs such as "caution" etc. 
b) UL 1459 clause 65.10d also quotes "preferred" lettering sizes. 
c) IEC 417 gives aspect ratios but no min/max or preferred sizes. 
d) The CE amendment 93/68/EEC of the LVD 73/23/EEC states in Annex III
that the CE mark shall not be have a vertical dimension of less than
5mm.

I haven't checked ISO 7000 but I suggest that you base your sizing of
the Class II symbol on the minimum size stated for the CE mark as this
must have been deemed as a visible size.
