Go to Options|Appt. Categories and you'll have a list of your 
 categories. Tap the third column - the one with a P in it. You'll get a 
 couple of options, but at the bottom of the page it says Default 
 Colors/Font:
    Tap the square that says Std. Make your selections. OK your way back 
 out.

 Unfortunately, the colors don't transfer from Desktop to DateBk, tho 
 categories do. But you can do a similar thing in Desktop to make the 
 colors match, and you only have to do it once.
