Michael: there actually is a way to customize the buttons on the ribbon. Open 
up the launcher and hold your finger on an icon in the ribbon until it grows 
and becomes translucent. Then just drag it anywhere in the launcher and then do 
the same thing with the other application you want to replace, only drag it to 
the ribbon.
