I never used Grafiti and cant comment on that on my Pro.
Touch Screen, YES
Stylus, YES
WIFI, YES
Internet Sharing Yes and Yes. You can use an on board program to share the
internet via tethering, I think most WM devices do this. I have used it and
it works. I also use a program called WMWifiRouter, it makes the device a
hot spot for WiFi. 
Able to view calendar easily and while on phone, YES there's a button on the
front of the phone for calendar. 
3G - Sprint runs CDMA EVDO-Rev A plenty fast for me. 
Cant say about the GSM version, sorry. 
I use Microsoft Exchange Server for my work email / contacts / calendar and
its easy to keep it updated. 
Add on stuff? Just anything WM 6 or 6.1 compatable will run on it.

Thanks, Patrick.  While I much prefer the Palm OS, I thought perhaps the Pro
might have something to offer.  I'm looking for something to tide me over
until I can afford and find a GSM Pre:

   - Grafiti or something similar,
   - Which also means a touch screen
   - And a stylus
   - Wifi
   - Internet Sharing (tethering)
   - Able to view my calendar while on the phone, and EASILY FIND IT.
   - 3G preferred but not essential
   - Decent camera preferred, but not essential
   - A calendar as smart and easy as the Palm
   - Ability to store my large calendar on a memory card
   - Ability to add on programs such as the defunct Pocket Quicken, shopping
   list, multiple lists, Wifi-to-go, a call gatekeeper, etc.
