I'm on a GTX 560 Ti as well, same issue. As far as I can tell it is because  
it is actually during a proper free Nouveau driver rather than the fall back  
as was present in Trisquel 6.

For some reason the refresh rate is locked at 30fps and I do not know how to  
change this. It has been like this since the initial Trisquel 7  
(beta/alpha/test - whatever it was called :D )release back in July.
