If you want freedom, the only option if you have bought Apple tablets and  
phones is to recycle them and buy new devices. If you can't afford that...  
then, well, I don't know why you were buying Apple's overpriced hardware to  
begin with, but in any case, you're out of luck. There simply is nothing you  
can do other than jailbreak the phone or tablet and continue to use iOS in  
that state. At that point, it's in principle no worse than using a laptop  
with Windows on it, but also no better.
