Food-wise, I've a soft spot for the buffet at the Paris hotel. Food from the different regions of France. And the crepes are yummy. Their fake indoors is pretty good as well, and the trip up the faux Eiffel is pricey but a lot of fun, esp. at night when you can see the whole city aglow and the dancing waters lit up across the street at Bellagio.
The Forum shops at Caesar's are a must-look. For sheer mind-boggling Vegas-y experience, the Venetian is a hoot -- singing gondoliers in a canal in a mall that looks like Venice! Live free lions at MGM, if she likes the kitties. Adults and cubs. Have not seen any of the Cirque shows, but they're all supposed to be good -- some more suitable for general audiences than others, natch. I find Fremont St. of limited interest -- one evening was quite enough for me. It's worth seeing, but doesn't take long. The overhead "Experience" is great fun, and the old-style casinos were fun to look at, but otherwise, meh (I didn't feel as safe there, either; a consideration for a woman alone that the other posters haven't considered).
