I've pretty much narrowed this down to an issue with hald-addon-stor as that seems to be the only common running process just after the freezes.
I assume that this is some kind of automounter and that it might be trying to automount the 'cd' that is in the Huawei modem, which could cause issues. I'm trying to work out how to turn it off, when I have I'll report back on if that fixes things.
