OK, think "we" might have cracked it. See attached datetime.log, it reported a
missing /etc/timezone file. So I created it as root with the content:
Europe/London
.. and repeated the test, (datetime2.log), however I now have a time being
displayed.

I don't see any way I would have deleted /etc/timezone unless it got
deleted when removing some package or other in the past, I certainly
haven't deleted it manually at any point.
