Interesting. I tried to modify the boot order using: 
root@malou-vaio:/home/malou# efibootmgr --bootorder 0001,0002,2001
BootCurrent: 0001
Timeout: 0 seconds
BootOrder: 0001,0002,2001
Boot0001* Ubuntu
Boot0002* Windows Boot Manager
Boot2001* EFI USB Device

And it *seems* to be persistent: 
root@malou-vaio:/home/malou# efibootmgr 
BootCurrent: 0001
Timeout: 0 seconds
BootOrder: 0001,0002,2001
Boot0001* Ubuntu
Boot0002* Windows Boot Manager
Boot2001* EFI USB Device

BUT, _immediately_ after I `reboot` the machine I still get Win8 booted
up by default. After I reboot back into Ubuntu using the workaround, I
can see that the boot order has changed with Win8 being default.

Since Win8 was shut down (and FastStartup disabled) when I modified the
boot order from within Ubuntu, would this suggest that the issue is at
firmware level? Is there any BIOS setting that could improve things?
