I had the same error (also the one you mentioned trying to reinstall the package), but I solved downloading the package from here https://launchpad.net/ubuntu/trusty/amd64/plymouth-theme-ubuntu-text/0.8.8-0ubuntu17.1 and installing it directly using dpkg. However actually I don't know why this method worked while apt-get didn't.
