Disclaimer: I'm not active any more and didn't have a deep look now,
but:

The transition was fully done. wine1.6 can be removed for sure.

afair wine-stable was a temporary binary package that we used instead of
the binary package wine from src:wine1.6 because the latter had an
epoch.

The current packages from src:wine (Debian) are named wine, wine32 and
wine64 - but not wine-stable.

Nowadays winehq.org offers packages named wine-stable. But they are
totally unrelated.
