I was able to make it work actually really easily, Except it's a still hidden feature, and only works under Wayland.
Just enter this command: gsettings set org.gnome.desktop.remote-desktop.rdp screen-share-mode extend Then RDP from the "Windows" App on an iOS or android phone or something while the monitors are still connected to the "server" (Not sure if that's required, but I did it, so I'm passing it on). Then disconnect the phone "Windows" App on iOS or android.
