The user authentification is not completely done using nautilus-share

If you want that everyone is able to write on your share folder, use the "Guest
Access" and check "Allow Other people to write in this folder"
If you only want that users of your system are able to write on your share
folder, check "Allow Other people to write in this folder" and do, for each
users, on a terminal :
sudo smbpasswd -a user
where user is the name of the user that you want to define the password
for samba authentification.
