I have never really had an issue with shuffling with sleeved cards, like Casey does I pretty much just push the two halves together and they interfold quite nicely. There are certainly some sleeves that will significantly increase the height of your deck and I use those for some of my favorite games, but the low quality ones are quite thin. Of course you replace them a bit more often too.
