I'm not sure if there's only ONE project for linux on the ipod, but I do remember reading somewhere that if the install fails, you can easily go back to the apple firmware on the ipod:

so, as far as you backup your music first, you should be fine. I've been meaning to do it myself. I just haven't made time to venture.
